All apples except Red Delicious are good for cooking. Courtlands are good for applesauce and do not turn brown (oxidize) when crushed. Our baker recommends Northern Spy for apple pie.
Chill your apples as soon as possible after picking. Keeping apples cold is very beneficial in terms of flavor retention and quality. Storing them in a refrigerator or cold storage room will keep them nice and crisp for 6 to 8 weeks. At warmer temperatures they mature more rapidly.
A variety of apples always works best. For example, try an equal amount of McIntosh, Northern Spy and Red Delicious.
Tip: Keep track of what you do and before long, you’ll have your very own secret recipe!
Coat 1L (4 cups) of firm, peeled apples with an ascorbic acid solution. Sprinkle 50 mL (1/4 cup) of granulated sugar, pack, label and freeze for up to one year. Ascorbic acid (vitamin C) prevents apples from browning. Use crystalline powder or tablet form. For 1 L (4 cups) of fruit, dissolve 1 mL (1/4 tsp.) powder or crystalline, or a 750 mg tablet in 50 mL (1/4 cup) cold water.
Yes apples bruise very easily so we encourage you to treat them with care. Believe it or not apples are more delicate than eggs! When you pick your apple from a tree, it should be in pristine condition. If you drop an apple on the ground it will not keep as long as an undamaged apple.
